You will be led by food foraging guru Dick Peebles and Head Chef Oskers Kalnins on a two day experience like no other. The forests surrounding Barcaldine House Hotel are rich in wild produce and mushrooms, and once gathered will be taken to the kitchen where you can learn how to prepare these delights with our award winning Head Chef Oskars Kalnins. Oskars is passionate about wild produce and his focus is on sourcing local ingredients for his two AA Rosette restaurant.
Dick was one of the first to develop this new market in 1994. An avid naturalist and enthusiastic mycologist, he left his job as a computer programmer in the oil business, then lost money in a fishing-boat venture and foraged for much of his food in the Scottish highlands while on the dole. He is now an authority on foraging and Director of WildFoods based in Glasgow (a supplier to Barcaldine House Hotel)
